Protein cookies

Ingredients:


- 1/4 cup Oat Flour
- 1 1/2 Tbsp @1upnutrition Cookies And Cream whey protein
- 1.4 tsp Baking Powder
- 1/2 Tbsp Cashew Butter
- 1 Tbsp Non-fat Plain Greek Yogurt
- 1 Tbsp Unsweetened Almond Milk
- 1 Chocolate Vanilla Sandwich Cookie
- 1/4 cup stevia

Instructions:


Preheat the oven to 350°F and line a baking sheet with parchment paper. Combine all the ingredients except the sandwich cookie in a bowl – oat flour, 1Up protein powder, baking powder, cashew butter, Greek yogurt, and almond milk.
Roughly chop chocolate vanilla sandwich cookie and add in most of the pieces.
Transfer cookie mixture onto a baking sheet, spread with a spoon, and shape.
Top with remaining sandwich cookie pieces. Bake for about 11 minutes – the top should be dry to touch. Let cool for a few minutes, top with zero-calorie confectioner sweetener and enjoy!
