- 1 cup coconut milk
- 4 tbsp chia seeds
- 3/4 scoop @1upnutrition Vegan Vanilla protein
- 1 tbsp unsweetened coconut chips
- 1 tsp vanilla extract
- 1/2 cup fresh peaches, sliced
In a bowl, combine the coconut milk, chia seeds, 1Up protein powder and vanilla extract. Whisk until well combined. Let the mixture sit for about 30 minutes at room temperature. Mix once more, cover, and refrigerate for at least 3 hours. Remove the bowl with the pudding from the fridge about 15 minutes prior to serving. Layer some pudding into the bottom each serving glasses. Layer some sliced peaches on top of the pudding layer. Top with some coconut chips and serve immediately. Enjoy!
