Ingredients
- 1 1/4 cup almond flour
- 1/2 cup @1upnutrition Chocolate protein
- 1/2 cup cacao powder
- 2 large eggs
- 1/4 cup coconut oil
- 1/4 stevia
- 1 tsp baking powder
- 1/4 cup greek yogurt
- 2 tblsp melted chocolate (optional)
Frosting
- 1cup Fat Free Cream Cheese
- 2 tblsp 1Up Chocolate Protein Powder
- 2 tblsp cocoa powder
- 2 g Stevia
Instructions
Preheat oven to 350F. Line a large cookie sheet with parchment paper. Add dry Ingredients in a large mixing bowl, stir together. In a separate mixing bowl add liquids, stir together constantly until smooth. Pour the liquid mixture into the dry ingredients and stir until combined. Scoop the cookie dough evenly on the lined cookie sheet using an ice cream scoop and flatten them to about 1/2 inch thick using a spoon. Bake for 12-15 minutes. While those are cooking, add your frosting ingredients into a bowl and mix. Put in the fridge to thicken. Once cookies have cooled, separate your frosting and sandwich between 2 cookies, top with some more chocolate if desired. Enjoy!
