Protein Cookies

Ingredients


- 1/4 Cup Coconut Flour
- 1 scoop @1upnutrition Chocolate egg white protein
- 3 Tbsp Unsweetened Dark Cocoa Powder
- 2 1/2 Tbsp stevia
- 1/2 tsp Baking Powder
- 1/4 tsp salt
- 3/4 cups Fat Free Greek Yogurt, vanilla
- 3 Tbsp sprinkles

Instructions


Preheat an oven to 350F and line a baking sheet with parchment paper. Mix the dry ingredients in a large bowl. Make sure no clumps remain from the coconut flour. Add the Greek yogurt to the dry ingredients and stir until a dough begins to form. Gradually add the sprinkles in as you fold the dough. Once all the sprinkles are added, use your hands to roll the dough into a large ball.


Divide the dough into 6 pieces and flatten them into circles between your palms. Bake for 14-16 minutes or until the cookies are baked through. They should still be soft but able to gently move. Enjoy!
