Protein Pancake Bites

Ingredients:

 

2 large eggs beaten

1 scoops @1upnutrition Egg White Salted Caramel protein

3/4 cup almond flour

1/3 cup Greek yogurt

2 tablespoons stevia

1 teaspoon baking powder

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

- Pinch nutmeg

 

Instructions:

 

Heat oven to 350°F. Lightly grease mini muffin pan. In a medium bowl, whisk together all ingredients. Batter will be slightly lumpy. Spoon 2 heaping tablespoon into each well in a mini muffin pan. Cook pancake bites for 12-14 minutes, until lightly browned. Cool in pan for 5 minutes. Remove and sprinkle with sliced almonds of your favorite topping. Enjoy!
