Protein Muffins

- 2 scoops @1upnutrition Vanilla Eggwhites protein
- 1 1/3 cup almond flour
- 1/3 cup stevia
- 4 tbsp chia seeds
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp lemon zest
- 1/2 cup greek yogurt
- 3/4 cup unsweetened apple sauce
- 2 1/2 tsp lemon extract
- 2 eggs

Preheat oven to 325 degrees. Coat mini muffin tin with cooking spray or coconut oil. In a medium bowl mix dry ingredients and wet ingredients separately then mix together and pour into muffin tin. Bake for 25-30 min. For the topping, simply dip muffins in yogurt and top with some lemon zest and chia seeds. Enjoy!
