Ingredients:
- 2 bananas, ripe and mashed
- 1 Scoop @1upnutrition Vanilla ISO protein
- 1 egg
- 2 egg whites
- 1 tsp vanilla extract
- 1/2 cup unsweetened almond milk
- 1 1/2 cups oat flour
- 1 tsp baking powder
- Cinnamon to taste
- Stevia to taste
- Pinch of salt
Chocolate to marble muffins
- 1 tbsp unsweetened cocoa powder
- 1 tbsp unsweetened almond milk
Instructions
Preheat the oven to 375 °F. Whisk mashed bananas, egg, egg whites, milk, and vanilla extract until you have a a well mixed batter. Add the 1Up protein powder, oat flour, baking powder, cinnamon, stevia, and salt, continue whisking. Spray a mini muffin tin and add batter into each tin, once you have used about 80% of the batter, add cocoa powder and milk to the remaining batter, whisk and add a tablespoon onto each muffin tin you had already filled with the batter, swirl with a small knife. Bake for 15 to 18 minutes, cool the muffins in the muffin tin on a rack for about 5 minutes and remove. Enjoy!
