Protein Cookies sandwich

- 40 g Oats
- 50 g Egg Whites
- 1 scoop @1upnutrition Caramel Toffee Macchiato whey protein
- 2 g Coconut Flour
- 2 g Stevia
- 2 g Vanilla Extract
- 2 g Baking Powder

- 90 g Fat Free Cream Cheese
- 5 g @1upnutrition Vanilla ISO Protein
- 2 g Coconut Flour
- 2 g Stevia
Preheat your oven to 350 degrees. Add your oats and water into a microwave safe bowl. Put them in the microwave for 90 seconds. Add your egg whites and mix them in. Put the rest of your dry ingredients into a separate bowl and mix together to avoid clumping. Add the wet ingredients to the dry ingredients and mix until you have a thick cookie batter like consistency. If it is still too runny add to the freezer for 20 minutes to thicken up. Cover your pan with parchment paper or spray with non-stick cooking spray. Add 6 balls of dough to your parchment and then shape into fat cookies. They will not move much when baking so you can shape into whatever shape you want them to be. Bake for 10 minutes or until golden brown. While those are cooking, add your frosting ingredients into a bowl and mix. Put in the fridge to thicken. Once cookies have cooled, separate your frosting into 3 equal portions and sandwich between 2 cookies. Enjoy!
