Protein Cookies

Ingredients:


- 1/4 cup Coconut Flour
- 1 scoop @1upnutrition Chocolate Peanut Butter Blast whey protein
- 3 tbsp unsweetened dark Cocoa powder
- 2 tbsp stevia
- 1/2 tsp baking Powder
- 1/4 tsp salt
- 3/4 cup fat free greek yogurt
- 3 tbsp walnuts
- 3 tbsp peanut butter (optional)

Instructions:


Preheat oven to 350F and line a baking sheet with parchment paper. Mix the dry ingredients in a large bowl. Make sure no clumps remain from the coconut flour. Add the Greek yogurt to the dry ingredients and stir until a dough begins to form. Gradually add the walnuts in as you fold the dough. Once all the walnuts are added, use your hands to roll the dough into a large ball. Divide the dough into 6 pieces and flatten them into circles between your palms. Bake for 14-16 minutes or until the cookies are baked through. Let them cool, drizzle with peanut butter if you’d like and enjoy!
