Protein Coffee Cake

Ingredients:


- 2 Bananas, ripe
- 1 tsp vanilla
- 2 scoops @1upnutrition cinnamon french toast whey protein
- 3 eggs
- 1/4 cup coconut oil
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp baking powder
- 1 1/2 cups almond flour

Crumble topping below

-1/4 cup solid coconut oil
-1/2 cup pecans
-2 tsp coconut sugar
-2 tsp cinnamon
-2 tsp almond flour

Instructions:

Preheat oven to 350F. Add wet ingredients to a bowl and mix, then add dry ingredients and mix until all are well combined. After, add the batter to a baking dish. Next, add all crumble ingredients to a food processor and pulse a couple times until it has a sand like consistency. Sprinkle on top of the cake and put in the oven for about 20-25 or until golden brown. Enjoy!
