- 1 tbsp unsweetened coconut flakes
- 1/2 cup @1upnutrition Coconut Pineapple protein
- 1 cup plain low-fat yogurt
- 1/4 cup diced pineapple, fresh
- 1/4 cup blueberries, fresh
- 1 tsp chia seeds
In a non-stick pan, toast coconut flakes over medium-high heat until golden brown. Remove and set aside. In a separate bowl, mix well low-fat plain yogurt and 1Up protein until no lumps remain. Serve and top with pineapple chunks, blueberries and coconut. Sprinkle with toasted coconut flakes and enjoy!
