Mini Protein Muffins



- 1 cup almond flour

- 1 Scoop @1upnutrition Blueberry Muffin protein 

- 1 tsp. baking powder

- 1/4 tsp. salt

- 1/4 coconut oil

- 1/4 cup stevia

- 1 egg

- 2 Tbsp. lemon juice

- 1/2 tsp. vanilla extract

- 1 Tbsp. almond milk

- 1/4 cup vanilla yogurt

- 1 cup fresh blueberries

- 1/4 cup white chocolate chips (optional)




Preheat oven to 350 degrees and spray a mini muffin pan with nonstick cooking spray and set aside. In a medium bowl, combine almond flour, 1Up protein, baking powder, stevia and salt. Stir to combine. In a small bowl whisk together the wet ingredients. Add the flour mixture and mix until all ingredients are incorporated. Fold in the blueberries then evenly distribute the muffin batter into the mini muffin pan and bake for 15-18 minutes. Insert a toothpick in the center of a muffin and make sure it comes out clean. In the meantime, (if using) melt white chocolate chips in microwave with a little bit of coconut oil. Let muffins cool, drizzle with white chocolate and enjoy!
