Ingredients:
- 3/4 cups coconut flour
- 1/2 cup stevia
- 1/3 cup @1upnutrition Coconut Ice Cream protein
- 1/3 cup shredded coconut
- 2 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup melted coconut oil
- 1 cup almond milk
- 4 large egg whites
- 2 large eggs
- 1 1/2 teaspoon coconut extract
- 1/2 teaspoon vanilla extract
- 3 to 4 tablespoon water as needed
Instructions:
Preheat the oven to 350F and grease a mini cake pan well. In a large bowl, whisk together the coconut flour, sweetener, 1Up protein powder, shredded coconut, baking powder, and salt. Stir in the melted coconut oil, almond milk, egg whites, eggs, and extracts. Whisk in water, 1 tablespoon at a time, until the batter is thick but pourable. Spread in the prepared mini cake pan and even out the top. Bake 25 to 30 minutes. Remove and let cool at least 30 minutes in the pan, top with more coconut and fruit if desired and enjoy!
