Lemon Protein Cookies - Recipe


- 1 cup Almond Flour
- 1 Scoop 1Up ISO Vanilla protein powder
- 1/4 cup stevia
- 1/2 teaspoon Baking soda
- 1/4 cup Fresh Lemon Juice
- 1/4 cup Coconut oil
- 1 tablespoon Lemon Zest (optional)
- 1/3 cup greek yogurt


Preheat oven to 350F. Line a cookie tray with parchment paper and set aside. In a medium mixing bowl, combine all the dry ingredients then set aside. In a small mixing bowl, add coconut oil and lemon juice, then microwave for 30 seconds, stir and repeat until the coconut oil is fully melted. Pour liquid onto dry ingredients, add lemon zest if desired and combine until it forms a cookie dough. Shape 8 even cookie dough balls and place each one on the cookie tray and press them slightly with your palm to flatten cookies. Bake for 15 minutes or until golden on sides. Remove the cookie tray from the oven and let it cool down on the tray for 10 minutes. Once ready, top cookies with greek yogurt and a little bit of lemon zest. Enjoy!
