Ingredients:
- 1 cup pumpkin pure
- 1 cup oat flour
- 1 scoop 1Up Protein powder
- 1 tablespoons coconut oil melted
- 2 tablespoons maple syrup
- 2 eggs
- 1 tsp. vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions:
In a small mixing bowl, stir together the coconut oil, maple syrup and vanilla extract. Beat in the eggs. In a separate bowl, whisk together the oat flour, 1Up protein powder, baking soda, salt and pumpkin pie spice. Mix the wet ingredients into the dry ingredients, until well mixed. The batter will be thick but look like pancakes batter. Heat a skillet with coconut oil. Use a 1/4 cup measuring cup to scoop up the batter and pour into the pan.Let cook until you start to see little bubbles forming on the side and then flip. Top pancakes with desired topping and enjoy!
