Coconut Protein Cake

Ingredients:

 

-1/2 cup coconut flour
-1 Scoop @1upnutrition Coconut Ice Cream whey protein
-1/3 cup coconut oil melted
-3 large eggs
-2 tsp vanilla extract
-1/4 cup stevia
-1 tsp baking powder
-1/4 cup unswetened coconut flakes

Instructions:

Preheat the oven to 350 F. Line a small baking tin with parchment paper. In a large bowl or in a food processor, blend the melted coconut oil, vanilla extract and eggs. Add the dry ingredients, 1Up protein, coconut flour, coconut flakes, baking powder and stevia. Mix until just combined and the batter is smooth. Fill into your baking pan and sprinkle with shredded coconut. Bake for 20 minutes or until edges are golden brown. Enjoy!
