Ingredients:
- 1 cup toasted coconut (divided)
- 3/4 cup coarsely chopped macadamia nuts
- 2 Tbsp water
- 1 scoop @1upnutrition Coconut protein
- 2 tsp vanilla
- 2 Tbsp honey
- 1/4 cup dark melted chocolate
Instructions:
Combine 3/4 cup of coconut and macadamia nuts into a medium bowl. Add the 1Up protein powder, water, vanilla and honey then mix. The consistency should be sticky and form a ball. Roll into 1-inch balls and place in the refrigerator to chill and firm. Remove protein bites from the fridge and roll 1 ball at a time in the melted chocolate to coat evenly, remove from the chocolate and set on a wire baking rack. Sprinkle with the rest of the coconut and let chocolate harden completely. Store in refrigerator. Enjoy!
