Blueberry Protein Cookies

Ingredients:


- 2 Cup unsweetened coconut flakes
- 1 scoop @1upnutrition Blueberry Muffin whey protein
- 1/2 cup coconut oil
- 1 Cup fresh blueberries
- 1/4 cup almond milk
- 3 tbsp honey
- 1/2 tsp vanilla
- Pinch of salt

Instructions:


Place all ingredients into blender or food processor. Mix ingredients until the shredded coconut breaks down. Drop the batter, about 2-3 teaspoons worth onto a lined cookie sheet with a small cookie scoop. Place in the fridge or freezer to harden for 10-20 minutes. Store in an airtight container in the fridge or freezer.
