Protein Cupcakes

Ingredients:
- 2 large egg whites
- 2 teaspoons coconut oil
- 1/4 cup non-fat Greek yogurt
- 2 scoops iEatProtein Caramel Macchiato protein coffee
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon stevia
- 2 tablespoons almond milk
- 1/2 teaspoon baking powder

Instructions:
Preheat oven to 325F. Combine egg whites, oil, and yogurt until smooth. Add remaining ingredients, and mix until smooth. Batter will be thick. Spoon batter into muffin cups.
Bake for about 20 minutes, until firm and a toothpick comes out clean. Let cool, and enjoy!
