Pumpkin Spice Protein Cookies

- 2 scoops 1Up Whey Pumpkin Spice Cake
- 1/4 cup coconut flour
- 1/4 cup stevia
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/2 tsp baking soda
- 2/3 cup pure pumpkin
- 1/4 cup egg whites
- 2 tbsp melted coconut oil

Preheat oven to 350F and spray a baking sheet with cooking spray or line it with parchment paper and set aside. Whisk together dry ingredients in a medium mixing bowl. Mix in wet ingredients until smooth. Drop batter by rounded tablespoons onto sheet. Bake for 20-25 minutes until golden brown Let cool 5-10 minutes and enjoy!
