Pumpkin Spice Protein Bars

- 3/4 Cup Oat Flour
- 2 Scoops 1Up Whey Pumpkin Spice Cake Protein
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 2 tsp Cinnamon
- ¼ tsp Ground Ginger
- 3 Eggs
- 1 Cup Fresh Pumpkin Puree
- ½ Tblsp Vanilla
- 1/2 Cup sliced almonds

Grease an 8×8 baking dish. Preheat the oven to 350 degrees. In a mixing bowl, whisk together the oat flour, 1Up protein powder, baking powder, salt, cinnamon and ginger. In another mixing bowl, whisk together the eggs, pumpkin puree and vanilla until smooth and well combined. Add the wet ingredients to the bowl of dry ingredients and whisk until combined. Pour the batter into the prepared baking dish and smooth. Sprinkle the sliced almonds over the top of the batter evenly. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Let cool before slicing into rectangles and enjoy!
