Protein Waffles

- 2 large eggs
- 1 Scoop 1Up Whey
- 1 cup cottage cheese
- 1 cup old fashioned oats
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup FitMix
- 1 Peach, sliced
- 1/4 cup blueberries
- 1 tsp chia seeds

Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron. Combine eggs, protein powder, cottage cheese, oats, vanilla and salt in blender until smooth.
Pour a scant 1/2 cup of the protein mixture into the waffle iron, close gently and cook until golden brown and crisp, about 4-5 minutes. When serving, add the FitMix, peaches and blueberries. Enjoy!
