Ingredients:
- 1 scoop 1UpWhey ( flavor of choice )
- 1/2 tsp baking powder
- 1/4 cup coconut flour
- 1 tsp cinnamon
- 1 tsp stevia
- 1 large egg
- 1/4 cup unsweetened almond milk
- 1/4 tsp vanilla extract
Instructions:
Grease a microwave safe bowl with cooking spray and add the 1Up Whey, baking powder, coconut flour, cinnamon, stevia and mix well. Add the egg and mix into the dry mixture. Add the almond milk and vanilla extract. If batter is too crumbly, continue adding milk until a thick batter is formed. Microwave for 60 seconds, or until just cooked in the centre. For serving add some cinnamon along with your favorite fruits and enjoy!
