Mango Chia Parfait

- 14 oz. coconut milk
- 6 tbsp chia seeds
- 1 tsp vanilla extract
- 1/2 scoop 1Up ISO Vanilla Protein
- 1/2 cup mango sliced
- 1 tblsp coconut chips

In a bowl, combine the coconut milk, chia seeds, protein powder and vanilla extract. Whisk until well combined. Let the mixture sit for about 30 minutes at room temperature. Mix once more, cover, and refrigerate for at least 3 hours. Remove the bowl with the pudding from the fridge about 15 minutes prior to serving. Spoon alternating layers of chia pudding and mango in a bowl or parfait glass. Enjoy!
