- 2/3 cup nonfat Greek yogurt
- 1 scoop Coffee with Hi-Protein
- 1/2 tsp vanilla
- 1 large egg white
- 1/3 cup unsweetened applesauce
- 1 cup oat flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Preheat oven to 375 degrees F. Prepare a baking sheet with parchment paper. In a blender or food processor, combine egg white, applesauce, coffee, vanilla, greek yogurt, salt, baking powder, baking soda and oat flour. Blend until ingredients are fully combined. Use an ice cream scoop to drop 2 tbsp of batter onto the prepared baking sheet. Bake 10 minutes until the edges of the cookies are just beginning to brown.
Remove from the oven, transfer to a wire rack to cool completely. Enjoy!
